What's Cookin' : Peanut Butter Pie

This has become a recent favorite, with 3 batches being produced in the past week! A very simple recipe that ends in rich, creamy peanut butter delight. Grab yourself a big glass of milk and proceed forward!




RECIPE


Your favorite brownie recipe ingredients (mine is top-secret, webby! Sorry!)
2 sticks butter
1 cup peanut butter
1 1/2 teaspoons vanilla
1.5 boxes powdered sugar
12 ounces semi sweet chocolate
2 tablespoons shortening


Bake your brownies in two 9-inch pie plates or one 12-inch pie plate (like the kind Costco bakes their pies in). The key to a dense, chewy brownie is to remove the pan from the oven the second it no longer has a sheen on top. This often means pulling the brownies out up to 10 minutes before the recipes say. It's worth it to stand at the oven and keep putting the timer on for 2 minutes to make sure you catch them at just the right time!

Let brownies cool.

Meanwhile, mix butter, peanut butter and vanilla until creamy. Add in powder sugar and mix until it is fully incorporated. Spread onto brownies. Put the pan into fridge for at least 30 minutes to chill.

Once chilled, melt chocolate and shortening in a glass bowl in the microwave at half power. I melt it for 30 seconds, stir, put it in again and do over until it is completely melted. Spread over chilled peanut butter brownie and put back into fridge until the chocolate is set.

Use a knife that has been dipped in hot water to cut the pie. This will allow the knife to slice through the chocolate without cracking it.

And, yes, there is a big chance that I ate some of it at 6 in the morning this week.....

Electric lemonade recipe


In my family, nothing screams summer like a tall glass of "electric lemonade."  The delightful mix of raspberries, lemon, and fresh mint is so satisfyingly refreshing, and yet so simple.
Ingredients:
  • lemonade concentrate (pink or yellow)
  • sprite
  • ice
  • frozen raspberries
  • fresh mint (!)
Put a handful of mint leaves, a handful of ice cubes, a few handfuls of frozen raspberries, half a can of lemonade concentrate, and an eye-balled amount of sprite into a blender.  Blend!  That's all there is to it.  And you have one of the most amazing  tastes of summer!  Enjoy!:)

What's Cookin: Recipe for Homemade Tortillas


My family loves Mexican food. My mom was an exchange student to Mexico back in her college days.
And so last night, completely disregarding the fact that we had consumed fajitas only a few days before, we quickly threw together a chicken taco dinner. Complete with homemade tortillas!



Handmade Tortillas

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 1/4 cup shortening
  • About 1/2 cup warm water
  • Additional shortening
  • Additional flour

Combine 2 cups flour and salt in a medium bowl. Rub in 1/4 cup shortening with your fingers until evenly mixed in. Gradually stir in enough water to make a soft dough. Divide dough into quarters. Divide each quarter into 3 equal pieces, making 12 pieces total. Shape each piece into a smooth ball. With your hands, smooth additional shortening over each ball to coat generously. Place balls in a medium bowl; cover with a dry cloth towel. Let stand at least 15 minutes. Preheat an ungreased griddle or large heavy skillet over medium heat. Shape each ball into a flat round patty. Sprinkle both side of patties with flour. On a lightly floured surgace, roll out each patty to an 8-inch circle. Place each tortilla on preheated griddle. Cook until bubbles form on top and under-side is flecked with brown. Stack cooked tortillas and cover with a dry cloth towel. Serve immediately or wrap in foil and reheat briefly before serving. Makes twelve 8-inch tortillas.

From the Oven: Gingersnaps!



Sometimes there is absolutely nothing like eating a fresh-from-the-oven gingersnap cookie! The gooeyness litereally melts in your mouth as the tangy ginger and cinnamon combo hits your senses. You reach for a second one without even realizing it!





These are one of my dad's top favorite cookies, so I've been making them since I was very little.



Perhaps a good book and a cup of tea are the perfect compliment to this crinkly cookie!
